You've made strawberry jam before. Is there any way to freshen it up and make it interesting again? Try adding the slightest hint of lavender. Or, make jelly from lavender as the main flavor and have the secondary flavor be a hint of chamomile.
Some other interesting options are beet jelly and garlic jelly. Some people have even made a corncob jelly. If you have more dandelion flowers than you need, consider making them into jelly. Some people say the flowers make it taste very similar to honey. Give it a try. At the very least, you'll have fewer seed heads to spread dandelions in your yard next year!
