Hi Bush Blueberry Wine
You will need:
- 1 gallon of water
- 2 1/2 lbs. blueberries
- 1 cup red grape concentrate
- 1 lb. 6 oz. granulated sugar
- 3/4 tsp. pectic enzyme
- 1 1/2 tsp. acid blend
- 1 tsp. yeast nutrient
- wine yeast
- 1/4 tsp. yeast energizer
Begin by bringing your water to a boil and then setting it aside. Mix all ingredients except yeast after you wash and crush you hi bush blueberries and put in primary fermentation vessel. Then add your hot water to dissolve sugar and stir. Cover well. After this mixture has cooled to 70-75 degrees F add an activated yeast starter. Continue to stir for 6-7 days or until specific gravity is below 1.030. Strain out press and fruit pulp. Siphon into secondary fermentation vessel and fit fermentation trap. Rack and sulfite in 3 weeks and again in 2 months. When wine is clear rack and stabilize. Sweeten to taste set aside for thirty days and bottle. Leave for a year so it will mature. Wine improves with age.
