Black Raspberry Wine

You will need:

- 7 Pints of Water
- 3 to 4 lbs. of Black Raspberries
- 2 1/4 lbs. of Granulated Sugar
- 1 Crushed Campden Tablet
- 1 tsp. Yeast Nutrient
- 1/2 tsp. Acid Blend
- 1/2 tsp. Pectic Enzyme
- 1/8 tsp. Grape Tannin
- Lalvin RC-212 Wine Yeast


Mix water and sugar. Put on to boil. Stir occasionally until sugar is completely dissolved. Wash and destem berries. Put in nylon straining bag. Tie. Put in bottom of primary fermentation vessel. Crush berries in bag. Pour boiling sugar water over berries to set color and extract juice. Add yeast nutrient acid blend and tannin. Let cool to 70 degrees. Then put crushed Campden tablet in. Cover with plastic wrap. Secure with large rubber band. Wait 12 hours. Put pectic enzyme in. Wait 12 more hours and add wine yeast. Recover the primary. Stir every day for a week. Replace plastic wrap if it looks like it needs it. Remove nylon bag. Let drip drain for an hour keeping primary covered as before. Do not squeeze bag. Put drippings back in primary and discard pulp. Put in secondary fermentation vessel. Fit airlock. Use dark secondary or wrap with brown paper bag to reserve color. Wait 60 days and rack into clean secondary. After 60 more days refit airlock and rack again. Wait 30 more days and stabilize. After another 30 days rack and sweeten if desired. After 2 weeks to ensure refermentation does not begin. Bottle into dark glass. Wait 6 months to drink. It's best if aged a year.

  

Rubus Idaeus or cultivated raspberry is indigenous to Europe and to Asia eastward to Japan where the red raspberry is likewise found. The Red raspberry grows wild and is common to Canada and the northern United States growing in hedges neglected fields thickets and hills flowering in May and ripening its fruit from June to August. The leaves and fruit are the medicinal parts. The leaves impart their properties to water giving to the infusion an odor and flavor somewhat similar to that of some kinds of black tea. The U. S. P. describes Rubus Idaeus fruit as follows: Deprived of the conical receptacle and therefore hollow at the base; hemispherical red finely hairy composed of from 20 to 30 coalesced small drupes each one crowned with the withered style; juice red; of an agreeable odor and a pleasant acidulous taste. The closely allied light-red fruit of Rubus strigosus Michaux and the purplish-black fruit of Rubus occidentalis  may be employed in place of the above. The Rubus occidentalis is the Black raspberry or Thimbleberry common in waste places and fence corners from Canada to Georgia and west.
