Black Tartarian Cherry Wine
You will need:
- 8 lbs. of Black Tartarian Cherries
- 8 Pints of Water
- 2 1/2 - 3 lbs. of Sugar (according to taste)
- 2 grams of bentonite
- 1 tsp. pectic enzyme
- 1/2 tsp. citric acid
- wine yeast
Destem clean and remove cherry pit. Put cherries into 1 pint of water. Bring to low boil. Then simmer covered for 15 minutes. When it cools drain through nylon. Squeeze nylon to extract all the juice and color. Combine pectic enzyme citric acid and sugar in crock or large bowl. Add the rest of the water and mix until sugar dissolves. Pour into storage container and cover. Let set for 12 hours. Then add yeast starter and bentonite. The container should be air tight and stored in a dark cool place. Rack every 3 weeks until no more sediments form. Bottle. Store in a cool dark location.
